Tried this delicious recipe from Real Simple. Not only does it pass the “ready in less than 30 minutes” test but it’s delicious. Modified recipe below!
1/4 cup mayonnaise
3/4 cup store-bought mango chutney
1 1/2 teaspoon curry powder
kosher salt and black pepper
1 rotisserie chicken, meat chopped
6 cups mixed greens (or place on a large lettuce leaf and serve salad separately)
In a large bowl, combine the mayonnaise, chutney, curry, ½ teaspoon salt, and ¼ teaspoon pepper. Toss the dressing with the chicken and serve over the greens. Serve with a side of quinoa or pita!
